    List of Ingredients




    SHRIMP, CORN AND PEPPER SALAD
    based on a recipe in the Pittsburgh Post-Gazette

    1 large ear corn, cooked and kernels removed
    1-1/2 cups cooked shrimp, chopped
    3/4 cup diced peppers, assorted colors and heat levels
    2 Tbsp. fresh parsley, chopped
    2 Tbsp. minced green onion
    4 tsp. lemon juice
    1 tsp. grated lemon peel
    1/2 tsp. hot sauce, or to taste
    2 Tbsp. mayonnaise

    Place corn kernels, shrimp, pepper, parsley, green onion,
    lemon juice, lemon peel and hot sauce in a medium bowl.
    Toss. Mix in mayonnaise. Season with salt and pepper.
    Chill. Serve on rolls for sandwiches, or with lettuce.
