    Sugar Snap Pea Salad with Cuke Dressing

    Cucumber Dressing
    2 cups cooked sugar snap peas (about 12 ounces)
    1/2 cup shredded carrot (about 1 small)
    6 Bibb lettuce leaves

    Prepare Cucumber Dressing in large glass or plastic bowl. Mix in
    peas and carrot. Cover and refrigerate about 2 hours or until
    chilled. Serve on lettuce leaves. 6 servings

    Cucumber Dressing

    Unpeeled cucumber adds a pretty color to this dressing. However,
    if the cucumber skin has been waxed or tastes bitter, it is best to
    make the dressing with a peeled cucumber.

    1 cup finely chopped seeded peeled cucumber (about 1 medium)
    1/2 cup plain nonfat yogurt
    1/2 teaspoon grated lime peel
    2 tablespoons chopped fresh or 2 teaspoons freeze-dried chives
    2 tablespoons lime juice
    1 tablespoon low-fat sour cream
    1/4 teaspoon pepper

    Mix all ingredients with fork or whisk. About 1 3/4 cups dressing
