    Watermelon Salad

    Louis Osteen, chef and owner of Louis's
    Restaurant in Charleston, South Carolina,
    shares his summer salad recipe.

    Ingredients:

    2 bunches watercress, chopped
    1 bunch green onion, chopped
    2 stems parsley, finely chopped
    4 cups watermelon (red or golden variety)
    in chunks, seeds removed
    1/2 tsp. sesame oil
    3 Tbs. sesame seeds

    Preparation:

    Combine in bowl the first four ingredients
    listed above. Toss lightly so that the
    watermelon doesn't bruise. In skillet, add
    sesame oil and brown the seeds until they
    are golden, turning frequently to prevent
    burning. Set aside seeds for later use.

    Ingredients for Citrus Vinaigrette:

    1 shallot, chopped
    2 Tbs. rice vinegar
    2 Tbs. apple cider vinegar
    juice of one orange
    juice of one lime
    juice of one lemon
    1 Tbs. olive oil
    1 Tbs. peanut oil
    2 tsp. Dijon mustard
    1 tsp. honey

    Preparation:

    Blend all ingredients in blender until
    creamy. When ready to serve, drizzle over
    salad to taste. Lightly toss and sprinkle
    with sesame seeds. Reserve some seeds
    for garnishing the individual servings.
