Shrimp Newburg Casserole

2 lb. lg. fresh shrimp
�� 1 tbsp. lemon juice
�� 3 tbsp. salad oil
�� 3/4 c. raw rice (1 1/3 c. Minute Rice)
�� 2 tbsp. butter
�� 1/4 c. minced onion
�� 1/2 c. minced celery
�� 1 can mushroom soup
�� 1 c. whipping cream
�� 3/4 c. almonds, slivered
�� 1/2 c. sherry
�� Paprika
�� Dash of cayenne pepper
�� 1 sm. can chopped mushrooms
�� 1 tsp. salt
Recipe
Early: Cook and prepare shrimp. Place in bowl and sprinkle with lemon juice and oil. Cook rice. Chill shrimp and rice.
Later: Prepare other ingredients such as minced onion and celery, slivered almonds.
Lastly: Heat oven. Saute onion and celery in butter in skillet for 5 minutes. Add to shrimp; then add rice, salt, and rest of ingredients (except 1/4 cup almonds and paprika). Mix well. Put in casserole, top with almonds and paprika. Bake uncovered until brown and bubbly. 4 to 6 servings. Oven temperature: 350 degrees. Oven time: 55 minutes
