Round Steak For 100

Serves 100.
32 pounds round steak
1 pound all-purpose flour
1 1/2 pounds fat
3 pounds onion, peeled and chopped
2 pounds celery, chopped
6 pounds 9 ounces tomato puree (a No. 10 can)
2 gallons beef stock
5 ounces salt
2 teaspoons pepper
Cut round steaks into 100 servings. Dip in flour and brown in the fat. Saut� onions and celery in fat.
Combine other ingredients and pour over steak pieces. Bake in 350 degrees F oven for 3 hours or longer.
