These little muffins are a great 1 point treat. I usually eat one with a container of yogurt on the way to work and it definitly stays with me all day. Be sure and cook well done!
List of Ingredients
2 cup uncooked oatmeal
1 1/2 tsp baking powder
1/2 tsp salt
1 cup fat-free skim milk
1/2 cup Egg Beaters
1/2 cup unsweetened applesauce ( I do a half apple in the food processor)
1/2 cup Splenda
2-3 tsp vanilla extract (actually I like maple better)
2-3 tsp ground cinnamon ( I add more(at least 1T)or use apple pie spice)
Preheat oven to 350* Combine wet ingredients and add dry ingredients. Bake in sprayed 8" square pan for 35-45 minutes. I actually make this as 12 individual muffins that equal 1 point each!!
Keeps well in refrig. or freezer. It's good cold or warm.
Freezes good. Lots of variations like banana, pumpkin etc. subbed for the apple.
