Pistachio Ice Cream
162 Cal 1g fiber 3 g fat
2 1/2 cups fat free half and half
1 box s/f pistachio instant pudding
1/4 cup coarsly chopped unsalted pistachios
Put half and half in medium bowl. Add pudding mix and beat with whisk for 2 minutes. Stire in pistachios. Pour into square or round metal cake pan and place in freezer. Freeze at least 2 hours, stirring frozen edged into center with rubber spatular every 30 minutes until firm.
