    Very delicious.

    List of Ingredients




    1 c. chopped onion
    1/2 c. salsa
    4 boxes frozen spinach (I think that each box is 10oz)
    16 oz shredded ched/mont/jack cheese mix
    3 cans enchilada sauce (I don't care for straight enchilada sauce, so I substitute part tomato sauce)
    20 corn tortillas
    1/2 tsp garlic powder
    salt to taste
    cooking oil

    Recipe



    Thaw and drain spinach (I squeeze the water out with my hands). In small amount of oil, cook onion until transparent. Add salsa, spinach, garlic, salt and saute to warm. To prepare tortillas, heat small amount of oil in skillet. Place tortillas on until pliable. Layer casserole in this order in baking dish (Charlene actually did her in a crock pot): sauce, tortillas, spinach mixture, cheese, tortilla. Repeat. Bake, covered loosely, until warmed through.
