    BANANA CREAM PIE

    List of Ingredients


    • Bananas
    • 3/4 C. sugar
    • 2 T. flour
    • 2 T. cornstarch, not packed
    • 1/4 t. salt
    • 2 C. milk
    • 2 eggs
    • 1 t. vanilla
    • -----Meringue:
    • 2 egg whites
    • 1/4 t. cream of tartar
    • 1/4 C. sugar
    • 1/4 t. vanilla


    Instructions


    1. Slice bananas to cover bottom of baked crust
    2. Combine sugar, flour, cornstarch and salt, blending well.
    3. Add scalded milk. Cook over low heat until very thick.
    4. Just before removing from stove, stir in well beaten egg yolks.
    5. Add vanilla.
    6. Pour cream filling over bananas
    7. Beat meringue ingredients until stiff peaks form. Spread over filling.
    8. Bake at 350 degrees 8 - 10 minutes.


    Final Comments


    Variation: add 1/2 - 1 C. shredded coconut instead of bananas for Coconut Cream Pie.
