List of Ingredients
2 boxes of frozen spinach rinsed and drained
8 eggs well beaten
2 cups milk
2 cups shredded mild cheddar
1 cup shredded jack cheese
1 teaspoon chicken bouillon mix (Knorr )
1 teaspoon dry mustard
1//2 teaspoon freshly ground black pepper
1-1/2 cups cooked, cubed turkey
Recipe
Mix all ingredients and put into a 9x13 well-sprayed and generously buttered glass baking dish. Bake for about 45 minutes, until a knife inserted into center comes out clean. Serve hot with additional cheese or with Mexican salsa (use the bottled stuff) as a topping.
Recipe can be halved and the turkey may be omitted
