Mom's Chicken Casserole
Cook one chicken, cool and dice. Make a sauce of 6 eggs well beaten, 1 C flour, 1/2 C margarine, 2 qts. liquid (chicken broth and milk). Cook together in a double boiler and cool. Make stuffing of about 3 loaves of bread, 1 lg. onion diced, 1 stick margarine melted, leaves from several celery ribs and some chopped parsley. Add one chopped peeled apple, one can mushroom soup and 3 T poultry seasoning. Butter a 9x14 pan and line with stuffing. Add a layer of sauce then the chicken. Add the remaining sauce for the next layer and then top with buttered breadcrumbs. Bake at 300 for about 45 min. (I use 1/2 this recipe) Serves 10 to 12.
