    Irish Coffee Muffins

    �1 � cup flour
    �� cup sugar
    �2 � tsp baking powder
    �1 T instant coffee
    �1 egg, slightly beaten
    �� cup Baileys Irish Cream
    �� cup half & half cream
    �1/3 cup vegetable oil
    �� cup mini chocolate chips

    Recipe



    In a large bowl, mix dry ingredients. In a small bowl, combine Baileys, half & half, oil and egg; add to dry mixture and stir just until combined. Stir in chocolate chips. Pour mixture into muffin tin that has been sprayed. Bake in preheated 400 degree oven for 20 � 25 minutes. Cool on rack for 5 minutes then remove from pan
