Shrimp and Spinach Pasta

�1 lb. fresh or frozen peeled/deveined raw shrimp
�3 TB. olive oil
�1 large yellow onion, thinly sliced
�1/2 red bell pepper, sliced
�1/2 yellow bell pepper, sliced
�8 oz. fresh, sliced mushrooms
�4 garlic cloves, chopped (or 11/4 tsp. MINCED GARLIC rehydrated in 1 TB. water)
�1/4 Cup shredded Parmesan cheese PLUS
�2 tsp. BASIL (or 4 TB. prepared pesto)
�1 large bag fresh spinach, washed and dried
�1/4 tsp. THYME
�8-12 oz. freshly cooked angel hair pasta
Recipe
Heat the olive oil in a large skillet over medium-high heat. Add the onion, bell peppers and mushrooms and cook until softened, about 5 minutes, stirring frequently. Add the garlic and cook briefly. Add the BASIL and cheese or pesto, stir well, then add the shrimp and cook until the shellfish is nearly done, about 3-4 minutes. Add the spinach and THYME and cook briefly. Serve over angel hair pasta.
