    Banana-Pudding Pie

    Chill time 11/2 hours
    Yield 8 servings
    3 large ripe bananas, sliced
    1 cup whipped cream

    PUDDING
    1/3cup sugar
    1/3 cup cornstarch
    3 cups milk
    2 large eggs beaten
    2 Tbs butter
    2 tsp vanilla extract

    CRUST
    1 cup graham-cracker crumbs
    1/4cup sugar
    5 Tbs butter melted

    1 prepare pudding; in 3 quart saucepan, combine sugar, cornstarch, milk, and eggs, heat to boiling over medium-high heat, stirring constantly
    cook 15 minutes.
    Continue stirring until pudding thickens and coats the back of a wooden spoon.
    Remove from heat and stir in butter and vanilla extract.
    Cover pudding surface with plastic wrap and cool 30 minutes.
    2 prepare crust; heat oven to 375 F.
    In medium bowl, mix together graham-cracker crumbs.
    Sugar and melted butter.
    With back of spoon, press mixture into 9 pie plate, making a small rim.
    Bake 8 to 10 minutes until lightly browned; cool completely on wire rack.
    3 stir and pour half of pudding into prepared crust. Layer half of banana slice evenly over pudding.
    Pour the remaining pudding over banana slice and finish with a layer of the remaining bananas.
    Refrigerate 1 hour.
    4 just before serving, spread large dollop of whipped cream over bananas.
