    Stuffed Potato Crisps

    If you want plain vegetables, this is not the recipe for you.

    List of Ingredients

    • 6 large potatoes, scrubbed clean
    • 1/2 cup {1 stick} butter, melted
    • Ground pepper
    • Garlic powder
    • 8 strips bacon, fried crisp and crumbled
    • 2 cups grated cheddar cheese


    1. Preheat the oven to 425.
    2. Bake the potatoes for 1 hour.
    3. Cool the potatoes and cut them into quarters lengthwise. Scrape away the potato pulp leaving a layer attached to the skin.
    4. Place the skins, cut-side up, on a buttered baking dish and drizzle the skins with the melted butter. Sprinkle the skins with pepper, garlic powder, bacon and cheese.
    5. Bake the skins for 15 minutes or until the cheese is golden brown and puffy and the skins are crisp. Serve
