    Swiss Eggs

    "Portable Electric Cookery", by Sunbeam (recipe adapted)

    List of Ingredients

    2 tbsp. butter or margarine
    1 cup light cream
    8 eggs
    Salt
    Tabasco
    Bread slices
    1 cup grated Swiss cheese
    3 tbsp. sherry

    Recipe

    Melt butter in electric skillet set at 300 degrees. Add cream and heat until bubbling. Break eggs into cream; season each with salt and a dash of Tabasco. Reduce heat to 260 degrees and cook eggs until whites are nearly set. Meanwhile, toast bread slices and butter them. Sprinkle cheese over eggs and cook until whites are set. Remove eggs to toast slices. Add sherry to cream in electric skillet. Cook 30 seconds. Pour over eggs on toast. If desired, sprinkle with slivered, toasted almonds.
