    "Casseroles: Favorite Recipes of Home Economics Teachers"

    List of Ingredients




    2 to 3 c. finely chopped cooked or leftover roast beef
    1 lg. onion, minced
    2 med. cloves of garlic, minced
    1 egg
    Salt and pepper to taste
    1 pkg. rigatoni noodles, cooked
    1 can tomato soup
    2 cans enchilada sauce

    Recipe



    Combine first six ingredients in bowl; mix well. Stuff cooled rigatoni with mixture. Place in lightly greased casserole. Combine soup and enchilada sauce. Pour over stuffed rigatoni. Bake at 350 degrees for 30 minutes.

    Yield: 6-8 servings
