    List of Ingredients




    2 cups uncooked instant rice
    3 medium carrots, cut into 2-inch strips
    1 cup chopped onion
    1 bunch scallions or green onions, cut into 1-inch lengths
    1/2 cup seedless raisins
    1/4 cup butter or margarine
    2 cups water
    1 (10 oz.) pkg. frozen English peas
    2 tsp. salt
    1 cup pecan halves
    1 tbsp. butter or margarine

    Recipe



    Combine rice, carrots, onion, scallions and raisins; saute' in a 1/4 cup butter about 5 minutes or until rice is lightly browned, stirring frequently. Add water, English peas, and salt; bring to a boil, seperating frozen peas. Reduce heat; cover and let simmer 5 minutes. Saute' pecans lightly in 1 tbsp. butter; then stir into rice mixture. Yield: 8 servings.
