    Pea Flips

    List of Ingredients

    1/2 lb. ground beef
    1 cup cooked black-eyed peas
    1/4 tsp. salt
    1/4 tsp. chili powder
    1/4 tsp. garlic powder
    Pastry (recipe follows)
    1/2 cup (2 oz.) shredded American cheese, divided

    Recipe

    Cook ground beef until brown, stirring to crumble; drain. Add peas, salt, chili powder, and garlic powder; stir well. Spoon about 1/4 cup of pea mixture into center of each pastry circle (see recipe below); sprinkle each one with one-sixth of the cheese. Moisten edges of circles; fold pastry in half, making sure edges are even. Press edges together with fork or finger to seal. Fry in deep hot oil (375 deg.) for three minutes or until golden brown. Drain on paper towels.

    Yield: 6 servings

    Pastry:

    Ingredients:

    2 cups all-purpose flour
    1/2 tsp. salt
    1/2 tsp. baking soda
    1/2 cup shortening
    1 tblsp. vinegar
    1/4 cup water

    Directions:

    Combine flour, salt, and baking soda in mixing bowl. Cut in shortening until mixture resembles coarse crumbs. Stir in vinegar and water. Cover bowl with a damp cloth; let stand for 20 minutes. Roll dough to about 1/8 inch thickness; cut into 6-inch circles.

    Yield: Enough pastry for 6 Pea Flips
