    This was always a favorite dish at our Mexican Pot Luck suppers at church.

    List of Ingredients




    2 cans cream of chicken soup
    8 oz. sour cream
    1 cup grated cheddar cheese
    2 Tblsp. butter
    1/2 cup chopped onion
    1 tsp. chili powder
    2 cups cooked chicken, chopped
    1 can chopped green chilis
    8 flour tortillas

    Recipe



    In a small bowl, combine soup, sour cream and grated cheese and set aside.

    In a medium saucepan, melt butter and cook onion and chili powder until onions are tender. Stir in chicken, chilis, and about 1/2 cup of soup mixture. Remove from heat.

    Grease a 12 x 8 baking dish. Spread a thin layer of soup mixture in bottom of pan.

    To Make Enchiladas:

    Spread about 1/4 cup of chicken mixture down the center of a flour tortilla. Roll tortilla and plan seam side down in pan.

    Spread remaining soup mixture over tops of enchiladas. Cover with foil and bake for 30 minutes at 350 degrees. Bake uncovered the last 5 minutes.
