    Recipe Introduction

    This pie is cake-like on top with a creamy filling at the bottom. One of my family's favorites. Pabby

    List of Ingredients

    2 tbsp. margerine
    1 c. sugar
    4 tbsp. flour
    1/4 tsp. salt
    5 tbsp. lemon juice from squeezed lemons
    grated lemon rind (zest) of 1 lemon
    1 1/2 c. milk
    3 egg yolks
    3 egg whites


    Cream butter and sugar. Add flour, salt, lemon juice and rind. Stir until well blended. Add well beaten egg yolks mixed with milk. Add stiffly beaten egg whites (spoon fold in). Pour into pastry shell. Bake at 425 degrees for 10 minutes then reduce heat to 325 degrees for an additional 30 minutes.
