Raspberry Jelly Roll

List of Ingredients
1 cup sugar
1/3 cup water
1 tsp vanilla
3/4 cup AP flour or 1 cup of cake flour
1 tsp baking powder
1/4 tsp salt
2/3 cup raspberry jam ( seedless)
oven set at 375. Line a jelly roll pan with parchament paper.
Beat the eggs for about 5 minutes until thick and lemon colored.
Gradually beat in sugar. Beat in water and vanilla on low speed.Gradually add the flour, baking powder, salt. Beat just to smooth. Pour into prepared pan and spread to the corners. Bake 12-15 minutes. Loosen the cake from the edges of the pan and turn upside down onto a towel generously sprinkled with powered sugar. Carefully remove paper.Trim off stiff edges of the cake if necessary. While hot carefully roll up from the narrow end using the towel as a guide. Cool on a wire rack for 30 minutes.
Unroll the cake remove the towel. Beat the jam slightly to soften up and spread over the cake. Roll up again and sprinkle with additional powered sugar.~~Janie~~
