Spritz Cookies Bernadotte
Source of Recipe
List of Ingredients
1 cup of butter
1 cup of sugar
1 1/2 teaspoons of almond extract
1 teaspoon of vanilla
1/4 teaspoon of salt
2 1/2 cups of sifted flour
1/4 level teaspoon of powdered ammonia
Take a mixing bowl and put in the butter, sugar, egg, almind and vanilla. Mix together well. Stir in the salt.
Mix the dry ammonia well into the flour then mix in the flour.
Never mix the dry ammonia directly into a wet mixture.
Mix until smooth. Take a cooky press and put a star tube in it. Extrude the mixture onto an ungreased baking sheet.
Let stand for 5 to 6 hours before baking. This is important.
Bake in a moderately hot oven of about 360 degrees for about 8 to 12 minutes or until done.
Pieces of nuts and fruits and colored sugar may be placed on cookies before they are baked.
It smells while baking, but when the cookies are baked, they have no ammonia smell at all. Without the ammonia they do not have a true Spritz texture.
PS: When I make Spritz I use a pastry bag with star tip...
