    Hello everybody. I was experimenting yesterday and decided to play around with a couple of recipes. This was my favorite so far, and it is absolutely delicious! Easy too! YUM! Oh, I took a spring roll recipe, made some adjustments, and additions, and turned it into a meal in a bowl!

    Its a salad, so you add the amounts of what you like, or dislike, or whatever. I dont think you can mess it up!

    Put your prepared lettuce in a bowl, I used bibb, but I may use romaine next time.

    Then Add to your taste the following:

    Chopped scallion
    Shredded carrots (I used the bagged preshredded kind)
    Julienne some snow peas
    Cilantro, chopped

    Then I added a handful of thawed shrimp from a bag (I Had the frozen cleaned peeled kind about 26-30 per bag) to my bowl. For the dressing I used a bottled peanut sauce (5 Tbl) Mixed with 2 Tbl Rice wine vinegar (2 Tbl) then drizzled with olive oil! YUMMM!!

    The dressing made enough for all 3 servings of salad I made, and you could just wisk your oil into the dressing base to make like a vinegarette. I also used some fresh ginger, s & p and crushed red in mine. So thats a thought for you too!
