    Chocolate Pudding
    Add pitted sliced fresh San Benito county bing cherries to this when in season!
    3 tablespoons cornstarch
    1/3 cup sugar
    1/3 cup unsweetened low-fat cocoa powder
    pinch of salt
    2 cups low-fat milk
    1 teaspoon real vanilla

    Whisk together all ingredients except the vanilla in a batter bowl. Microwave on high for 3 minutes. Whisk well. Microwave another 2 min. Whisk well. Microwave another 2-4 min., or until pudding has set. Pour the pudding into individual serving bowls. Cover with Stretch-Tite, bringing the plastic wrap right to the surface of the pudding to prevent the crust from forming on the top. Cool. Gently remove the plastic wrap. Fold in sliced fruit if using. Serve.
