    Rosy Rhubarb Cake

    1/2 cup shortening
    2 cups flour
    2 1/2 tsp baking powder
    1/4 tsp salt
    1/4 cup brown sugar
    1 slightly beaten egg
    3/4 cup milk
    6 cups finely diced rhubarb
    1 (3 oz.) pkg strawberry jello

    Topping: 6 Tbsp butter
    1 1/2 cups sugar
    1/2 cup flour

    Recipe



    Cut together shortening, flour, baking powder, salt, and sugar. Add egg and milk, mix and spread in the bottom and a little up the sides of 9 x 13 pan. Top with rhubarb and sprinkle jello over. Mix topping ingredients and spread over rhubarb/jello. Bake at 350 for 50 minutes.
