1 lb ground beef browned
1/2 onion -browned with beef
1/2 pepper - browned with beef
1/2 tsp salt
1/2 tsp pepper
2 Tbsp margarine
6 medium potatoes peeled and finely shredded
3 beaten eggs
1/3 cup milk
2 cups shredded cheese
Recipe
Melt margarine in skillet and spread potatoes in skillet. Sprinkle with salt and pepper. Top with beef mixture. Combine eggs and milk. Pour over all. Cook covered, until potatoes are tender, about 30 minutes. Top with cheese. Cover and heat until cheese is melted - about 5 minutes.
