16 - 20 cherry tomatoes
one pound of bacon
1/2 cup mayonnaise
3 Tbsp. fresh grated parmesan cheese
1/3 cup chopped green onions
2 Tbsp. parsley
Fry bacon until crisp, drain on paper towel until completely cool.
Mix mayonnaise, parmesan cheese, green onions
and parsley. Crush the bacon and add to mixture
For best flavor let sit over night in the fridge, or at least two hours, so full flavor can be experienced.
Core tomatoes and use a 1/4 teaspoon to scoop out the insides. Stuff the cherry tomatoes no sooner than one hour prior to being served.
