    Eggs: Spanish Omelette With Cheese

    List of Ingredients


    • 1 tablespoon vegetable oil
    • 3 cups frozen O' Brien potatoes
    • 1/4 teaspoon each salt and pepper
    • 3/4 cup diced ham (4 ounces)
    • 8 large eggs
    • 1/2 cup shredded monterey jack or cheddar cheese (2 ounces)


    Instructions


    1. Preheat broiler. Heat oil in a 10 to 11" nonstick skillet over medium heat. Add frozen potatoes, salt and pepper. Cover and cook as package directs. Add ham and cook, stirring until hot. Reduce heat to medium low.

    2. Whisk eggs in a large bowl. Pour into skillet and stir to combine with potato mixture. Cover and cook 6 minutes or until eggs are set on bottom. Sprinkle with cheese.

    3. Broil 4 to 5 inches from heat source 1 to 2 minutes until eggs set and cheese melts. Slide onto serving plate and cut into wedges.
