    Beef: Southwestern Chili Casserole

    List of Ingredients


    • 1 (14 ounce) can beef broth
    • 1 (6 ounce) can tomato paste
    • 1 package taco seasoning mix
    • 3/4 cup uncooked rice
    • 1 pound ground beef
    • 1 cup chopped onion
    • 1 (17 ounce) can whole kernel corn, drained
    • corn chips


    Instructions


    1. In a small bowl, blend 1 cup of the beef broth, tomato paste and taco seasoning mix; set aside.

    2. In a saucepan over high heat, combine remaining broth and enough liquid to equal 1 3/4 cups liquid; heat to a boil.

    3. Add rice and cook according to package directions.

    4. In a large skillet, over medium high heat, brown beef and onion until done; drain fat.

    5. In a 2 quart casserole, layer 1/3 each of rice, corn, meat mixture and reserved sauce; repeat layers twice, combining the last portion of meat and sauce for the top layer.

    6. Cover; bake at 375 degrees for 40 to 45 minutes, or until hot.

    7. Garnish with corn chips.
