White Oil Cake

- 2 1/4 cups sifted cake flour
- 1 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cooking oil
- 1/2 cup minus 1 tablespoon milk
- 1/2 cup water
- 1 teaspoon vanilla
- 1/2 cup egg whites (3 or 4)
- 1/4 teaspoon cream of tartar
- 1 cup sugar
Instructions
- Preheat oven to 375 degrees. Grease and flour or line two 8 inch layer pans with waxed paper.
- Mix and sift flour, baking powder and salt into mixer bowl. Add oil, milk, water and vanilla. Beat 2 minutes on medium speed, scraping frequently.
- In seperate mixing bowl, beat egg whites and cream of tartar until stiff but not dry. Add meringue to batter and fold in, using about 40 strokes. Pour batter into pans.
- Bake at 375 degrees approximately 27 minutes. Remove from oven and cool in pans about 12 minutes. Remove from pans and finish cooling on rack.
