    Chicken: Chicken Casserole

    List of Ingredients


    • 12 slices whole wheat bread, crusts removed
    • 3 boneless, skinless chicken breasts, cut in 1" chunks
    • 1 cup diced celery
    • 1/2 cup finely chopped onion
    • 1 red or green bell pepper, diced
    • 12 egg whites or egg substitute that equals 6 eggs
    • 2 tablespoons fat free mayonnaise
    • 2 cups fat free buttermilk
    • 1 teaspoon rosemary
    • 1 teaspoon marjoram
    • 1/2 teaspoon ground ginger
    • 1 can healthy request cream of mushroom soup
    • 1/2 cup fat free shredded cheddar cheese (optional)


    Instructions


    1. Spay a 9x13 inch baking dish with cooking spray. Line pan with 6 slices of bread.

    2. Place chicken, celery, onion and bell pepper over bread. Place 6 more slices of bread on top of the chicken and veggies.

    3. Lightly beat egg whites, mayonnaise, herbs and buttermilk. Pour over the top of bread. Let stand, covered in the refrigerator overnight.

    4. Bake at 350 degrees for 30 minutes. Pour soup over top. Bake for 30 more minutes.

    5. You can add 1/2 cup fat free shredded cheddar cheese during the last 5 minutes of baking. Let stand 10 minutes before serving.
