Fried Chicken New Orleans

- 1/2 cup flour
- 1 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 2 1/2 to 3-pound frying chicken, cut up
- 1 egg, beaten
- 2 tablespoons water
- 1 cup herb-stuffing mix
- 1/2 cup shortening
Instructions
- Combine flour, salt and cayenne in a paper bag. Shake chicken in bag, a few pieces at a time, until well coated. Crush stuffing mix to a fine powder by rolling with a rolling pin. Combine egg and water in a bowl. Dip floured chicken pieces into egg mixture, then into stuffing mix to coat. Over high heat, melt shortening in a large skillet; saute chicken, uncovered, until golden brown on all sides. Lower heat and cook, uncovered 20 to 40 minutes or until tender and brown. Turn pieces occasionally during cooking to brown evenly. Drain on paper toweling.
