Broccoli: Light Broccoli And Cheese Casserole

List of Ingredients
- 1 cup uncooked white rice
- 1/4 cup chopped onion
- 1/4 cup skim milk
- 4 ounces light velveeta cheese, cubed
- 2 (10 ounce) packages frozen chopped broccoli, thawed
- 1 (10 3/4 ounce) can healthy request cream of mushroom soup
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients in a large bowl and place in a baking dish coated with cooking spray. Bake for 45 minutes.
- Yield: 8 servings at 137 calories each.
Final Comments
I sometimes add a small can of mushrooms or fresh ones if I have them.
