Sweet Potatoes: Roasted Sweet Potatoes

List of Ingredients



• 3 medium sweet potatoes, peeled
  
• 1/4 cup orange juice
  
• 1 tablespoon brown sugar
  
• 1 tablespoon vegetable oil
  
• 1/4 teaspoon each dried thyme, salt and pepper
  






Instructions



1. Preheat oven to 400 degrees. Slice potatoes into 1/4 inch slices.
   
   
2. Place in a rectangular baking dish. Combine remaining ingredients; pour over potatoes, stirring to coat.
   
   
3. Bake 25 to 30 minutes, stirring once, until potatoes are tender.
   
   
4. Makes 4 servings
