    Zucchini: Zucchini And Tomato Casserole

    List of Ingredients


    • 4 zucchini , cubed
    • black pepper to taste
    • 1 tablespoon snipped chives
    • 1 teaspoon butter or margarine
    • 2 large tomatoes, sliced
    • 1 teaspoon dried basil leaf
    • 1/2 cup shredded cheddar cheese


    Instructions


    1. Preheat oven to 350.

    2. Steam zucchini until crisp tender.

    3. Using a slotted spoon, transfer zucchini to a shallow 2 quart casserole.

    4. Stir pepper and chives into margarine and pour over zucchini. Cover with tomato slices; sprinkle with basil and cheese.

    5. Bake, uncovered 30 minutes.
