    List of Ingredients


    • 1 cup graham cracker crumbs
    • 2 tablespoons butter or margarine
    • 1 3 oz package strawberry jello
    • 1 16oz package of sliced sweet frozen strawberries
    • 1 tablespoon lemon juice
    • 4 oz cream cheese ( softened)
    • 1 teaspoon vanilla
    • dash of salt
    • 1 cup whipping cream, whipped
    • fresh strawberries and mint, optional
    • 1/2 cup conferectioners' sugar


    Instructions


    1. In a small bowl combine cracker crumbs and butter; set 1 tablespoon aside for topping.
    2. Press the remaining crumb mixture onto the bottom of a greased 8-inch square baking dish.
    3. Bake at 325 for 10-14 minutes, or until golden brown. Cool on a wire rack.
    4. In a bowl, dessolve getatin in boiling water; stir in strawberries and lemon juice.
    5. Refrigerate until partially set, about 1-1/2 hours
    6. In a small mixing bowl, beat the cream cheese, sugar, vanilla and salt until smooth.
    7. Fold in whipped cream.
    8. Spread half over cooled crust.
    9. Cover and refrigerate remaining cream mixture.
    10. Pour gelatin mixture over filling; refrigerate until firm.
    11. Top with remaining cream mixture. Sprinkle with reserved crumb mixture.
    12. Refrigerate over night.
    13. Garnish with fresh berries and mint if desired.
    14. Yield: 9 Sevings.
