• 4 eggs
  
• 1 cup sour cream
  
• 1/2 cup shredded cheddar cheese
  
• 1/2 can diced green chile peppers, drained
  
• 1/2 green onion minced
  
• 2 tblsp. chopped fresh parsley
  
• 1/2 cup frozen corn kernels
  
• 1/2 can black beans, rinsed and drained
  
• 2 tblsp. chopped red pepper
  
• 2 tblsp. bacon bits
  
• 1/2 cup fresh salsa
  






Instructions



1. Preheat oven 350�. Lightly grease a 9x13 baking dish. In a large bowl, whisk together the eggs, sour cream, Cheddar cheese, green chile peppers, green onion and parsley. Mix in the corn, black beans, red pepper and bacon bits. Transfer to the prepared baking dish. Bake for 30 minutes , or until knife inserted in the center of casserole comes out clean. Serve with fresh salsa.
