    Almond Rice Loaf

    Serves: 6

    List of Ingredients

    2 cups almonds, chopped
    2 cups steamed brown rice
    1 cup cashew (or tofu) milk
    1/4 cup dry quick oats (or quinoa flakes)
    3 cups cubed bread (gluten free if necessary)
    1 Tbsp. soy sauce (or wheat free tamari or Bragg's Liquid Aminos)
    1/4 cup peanut butter
    1/4 cup chopped onion
    2 Tbsp. chopped parsley

    Recipe

    Soak bread and oats in milk alternative. Blend the rice, peanut butter, and almonds with a fork. Add and mix well the rest of the ingredients. Bake in square baking dish or small laof pan for 35 minutes at 350 degrees F. Serve with gravy or parsley sauce.
