    POLLO ALLA MARENGO (Casserole Style)

    List of Ingredients




    6 - 8 boned chicken thigh pieces
    2 tablespoons butter
    2 tablespoons extra virgin olive oil
    salt and freshly ground black pepper
    freshly ground nutmeg
    1/2 cup dry white wine
    1 tablespoons flour
    3/4 cup chicken stock
    1 lemon cut into 8 segments
    1 sm. carrot, finely grated
    1 lg. onion, finely chopped



    Place piece of lemon in thigh filet and roll up. Secure with 2 pieces of kitchen twine. Place chicken pieces in a heavy-bottomed pan with the butter and oil and saute until light golden. Season with salt, pepper and nutmeg. Cook onion and grated carrot in the pan, stirring so that it does not stick. Add the flour, stir in and add chicken stock and wine. Place in casserole. Cook in moderate oven for about 50 minutes, or until chicken is tender. Add the stock as required during cooking to keep the chicken moist. Serve with baby boiled potatoes and hot salad.
