    3/4 cup margarine
    3/4 cup sugar
    1 beaten egg
    1 cup cold mashed cooked carrots
    2 cups all purpose flour
    2 tsp baking powder
    1/4 tsp salt
    1 tsp vanilla
    1/3 cup walnuts (optional)

    Recipe



    cream butter and sugar till fluffy, add egg and
    carrot blend well, stir in dry ingredients,stir in
    vanilla and nuts mix well.drop by tsp on ungreased
    cookie sheet. bake in 350 degree oven 15-20 min
    cool on wire racks before frosting.

    orange icing

    3 tblsp melted butter
    juice and grated rind of 1 orange
    icing sugar to desired thickness
