    Concord Grape Conserve

    List of Ingredients


    • 4 lbs. Concord grapes
    • 1 orange
    • 4 cups sugar
    • Scant 1/2 tsp salt
    • 1 cup chopped walnuts


    Instructions


    1. Slip off the grape skins by pinching each one. Set skins aside in a bowl. Simmer the grape pulp for 15 minutes to loosen seeds. Remove seeds by forcing pulp through a sieve or food mill. Discard seeds. Remove seeds from the orange and chop it, unpeeled.

    2. Combine the grape pulp, sugar, salt and orange. Stirring often, heat the mixture until it begins to thicken. Add the grape skins and cook 10 to 15 minutes longer, until the desired consistency is reached. Add the walnuts.

    3. Pour conserve into sterilized jars. Seal and process 5 minutes in a boiling-water bath canner.

      Makes about eight (8-ounce) jars.
