    1 lb Ground turkey, chicken or lean veal
    1/4 cup No Salt/ Low Salt Chicken Stock
    1 Sweet onion, large (recommend Vidalia)
    1 tbsp Braggs amino acid
    2 tbsp Rice vinegar
    2 tbsp Ginger, ground
    3 cups Cooked rice
    Roma tomatoes
    Lettuce (Boston Bibb, Butter Lettuce, Head Lettuce, Iceberg Lettuce, Green Leaf Lettuce)

    In a non-stick pan, saute onion in chicken stock until very soft. Add Braggs Amino Acid, rice vinegar and ginger. Cook for 1 minute to combine the flavours. Add ground meat. Cook through breaking up ground meat with a wooden spoon. Add rice and cook until liquid is absorbed into the rice and meat mixture. Divide into 12 portions. Set aside.

    Chop tomatoes. Set aside. Wash lettuce carefully to remove all dirt. If using a more stiff lettuce, microwave for 15 sec, on medium, to wilt slightly so that it is easier to fold.

    Lay one lettuce leaf on a flat surface. Mound 1 portion of meat/rice mixture in center of leaf. Add desired amount of tomatoes. Fold lettuce over onto itself to create a package. Repeat with remaining mixture and lettuce.

    Note: You may choose to make all the package at once and microwave them to reheat, as needed. I like to package the mixture up seperately so that I can use the mixture for other things if desired. For example, sometimes I like to add chopped tomatoes and additional vegetables to the mixture just for something different.

    Yield: 2 packages are good for 2 oz Protein and 1/2 cup Carb.
