    Smoky Black Bean Soup

    This is a tasty inexpensive way to enjoy something new and exciting.


    List of Ingredients


    • One pound dried black beans, soaked overnight
    • One tablespoon WATKINS Onion Liquid Spice.
    • One tablespoon WATKINS Garlic Liquid Spice.
    • 2 cups carrot, coarsely chopped
    • 1 1/2 cups onion, coarsely chopped
    • 1 tablespoon jalapeno pepper, minced
    • 1 tablespoon WATKINS Cumin
    • 1 teaspoon WATKINS Garlic Peppercorn Blend
    • 2 smoked ham hocks
    • 5 cups water
    • 1/4 cup WATKINS Chicken Soup Base
    • 1/3 cup fresh squeezed lime juice
    • sour cream for garnish
    • WATKINS Cilantro for garnish


    Instructions


    1. Rinse beans and drain in colander while you start vegetables.
    2. Heat the liquid spices on a large kettle or dutch oven
    3. saute the carrots and onions until softened but not browned, about 5 minutes
    4. stir in the jalapeno pepper and cook for a couple of minutes more.
    5. To the vegetables add the drained black beans, ham hocks, water, and chicken soup base.
    6. cook for four hours over low heat, stirring frequently, until the beans are tender.
    7. remove ham hocks, cool slightly and remove any meat from the bones.
    8. Return to soup along with lime juice.
    9. Serve immediately with sour cream and a sprinkling of cilantro
    10. Enjoy
