    2 1/2 cups all purpose flour
    1/2 cup wheat starch (see note)
    1 tsp. granulated sugar
    1 tsp. salt
    1 cup hot water
    1 1/2 tbsp. sesame oil
    1 1/2 cups thinly sliced green onion
    1/4 cup cooking oil

    Recipe



    Combine flour, wheat starch, sugar and salt in large bowl.

    Slowly stir in enough hot water until ball starts for form. Knead on lightly floured surface until smooth and elastic. Wrap in plastic wrap. Let rest for 30 minutes. Divide into 12 portions. Keep dough covered in plastic wrap to prevent drying out.

    Shap 1 portion into flattened disc. Roll out very thinly to 6 inch circle on lightly greased surface with rolling pin that has been greased with sesame oil.

    Sprinkle with about 2 tbsp. green onion. Roll up tightly, jelly roll style. Pinch edge and ends together to seal. Roll and pull to shape into 9 inch log. Twist several times in 1 direction. Shape into tight coil on ightly greased surface. Roll out to about 4 1/2 inch circle with lightly greased rolling pin. Repeat with remaining dough and green onion.

    heat 1 tbsp. cooking oil in lrge frying pan on medium heat until hot. Cook, 3 at a time, for about 2 minutes per side, flattening with lifter occasionally, until brown patches appear on both sides. Do not overcook. They should be soft, pliable and chewy insidde but crisp on the outside. Remove to paper towels to drain. Repeat, adding cooking oil to pan each time, until alll cakes are cooked. Serve warm. Makes 12 cakes.

    Note: All purpose flour may be substituted for wheat starch. However, wheat starch doesm make green onion cakes more chewy without being doughy.
