To cut cheese cakes use dental floss or strong button thread. Hold a length of the thread taut between our hands and slice down through the middle of the cake. RElease one end of the thread and pull it through the cake. Repeat, making ucts like spokes in a wheel. YOu ca also use a thin sharp knife dipped in hot water, then wiped off, but it isn't as good of a conversation starter.
