Mom: Chocolate French Toast with Berries

8 ounces (226 g) semi-sweet chocolate, finely chopped
1 1/2 cups (375 mL) heavy 35-per-cent cream, divided
2 or 3 tablespoons (25 to 50 mL) strawberry or raspberry jam
6 eggs
1 tablespoon (15 mL) vanilla extract
16 slices cut diagonally from a baguette, each slice 1/2 inch (1 cm) thick
3 tablespoons (50 mL) butter
Icing sugar, for dusting
1 cup (250 mL) fresh berries, depending on availability, to garnishRecipe
1. To make berry chocolate ganache, place chocolate in a medium-sized
stainless steel bowl. Heat 1 cup (250 mL) of cream in a small saucepan until
it comes to a boil. Remove from stove and pour over chocolate. Let it sit
for 1 minute, then whisk until chocolate has melted. Add jam and chill until
firm.
2. Whisk eggs with remaining cream and add vanilla. Spread one side of a
bread slice generously with chocolate ganache and top with second slice to
make a sandwich. Press down firm and repeat with remaining slices. Dip bread
sandwiches into the egg mixture.
3. Melt butter in a frying pan on medium heat. Fry sandwiches until crispy
and golden. Keep sandwiches warm in the oven at 150 degreesF (66 degreesC).
4. To serve, dust with powdered sugar and top with fresh berries.
