    Frozen Lemon Pie

    This is a year 'round favorite. Delicious made with Key lime juice also.


    List of Ingredients


    • 4 eggs
    • 1/8 teaspoon salt
    • juice of two lemons
    • 3/4 cup sugar
    • grated rind of one lemon
    • 1 teaspoon vanilla
    • 1 cup heavy cream
    • vanilla wafers


    Instructions


    1. Separate the eggs.
    2. Grate the lemon rind, then squeeze the juice from the lemons.
    3. Combine the egg yolks (well beaten), salt, sugar and lemon rind in bowl of double boiler. Cook stirring constantly until quite thickened. Cool, stirring occasionally. Add the vanilla.
    4. Beat the egg whites.
    5. Beat the heavy cream.
    6. Fold egg whites and the cream into the lemon mixture.
    7. Crush enough vanilla wafers to cover the bottom of a 9x4 pan. Add mixture, cover with some more wafer crumbs.
    8. Freeze several hours.
