Frozen Raspberry Squares
List of Ingredients
1 1/2 cups chocolate wafer crumbs (15-20 cookies)
1/2 cup finely chopped pistachios
5 tablespoons melted butter
1 teaspoon vanilla
1 1/2 quarts soft pistachio ice cream
1 jar (8 ounces) seedless raspberry jam
chocolate sauce
Recipe
Mix the crumbs, butter, vanilla and nuts.
Spread half of the mixture on a wax paper 9 x 9 pan.
Spread ice cream on top.
Cover with the raspberry jam.
Cover with the rest of the crumbs.
Freeze, cut in squares and top with chocolate sauce when served.
