    A perfect side dish for BBQ chicken is this cold wild rice salad developed by John Harms, former chef and owner of Dijon's Restaurant. He met his wife when she and her bowling team would come into the restaurant. After leaving Dijon's he was a cook for Monsanto Corporation in West St. Louis County..

    p.s. ...at home, Shirley is the cook!

    1 [6 oz] package long grain and wild rice
    Prepare and let cool. Combine in a bowl with:

    1 bunch [6 or 7] green onions, chopped, include some green
    12 black olives, diced
    3/4 tsp curry powder or to taste
    14 oz can artichoke hearts, drained and cut up
    1/2 cup mayo
    8 oz can sliced water chestnuts, drained

    Chill covered overnight for flavors to blend. Serve on a bed of chilled lettuce leaves. Serves 4 to 6
